The citrus muffin experiment wages on. It’s fueled by the fact that now that summer has ended Coffee Bean is carrying pumpkin choc. chip muffins (not that I’m complaining) instead of lovely citrus deliciousness.
So, I thought I’d try again. This time, more zest, less orange juice, a splash of vanilla (daring, I know) and the repeat glaze from before.
These muffins were better, but only marginally. The first round was juicy and didn’t rise, not the case with this group. But, they were a little too firm…
Eric thinks it’s a lost cause. That I won’t be able to recreate mass market muffins without preservatives. And maybe he’s right. In the meantime though, I’m going to keep trying. As you can tell from the picture, these babies don’t last too long in our house.
